- Fresh cilantro and Thai basil, for garnish
Instructions
- In a large skillet or pot, heat a drizzle of oil over medium heat. Add chopped garlic, ginger, and lemongrass. Sauté until fragrant, about 2-3 minutes.
- Pour in the broth and add the coconut milk, stirring well to combine. Bring to a gentle simmer.
- Toss in your vegetables and simmer for about 5-7 minutes until they start to soften.
- Gently place the fish fillets into the broth, cooking for 5-7 minutes, until cooked through and flaky.
- Squeeze fresh lime juice over the soup, stir in fresh herbs, and let everything combine for another minute on the heat.
- Taste and adjust seasoning as necessary.
- Ladle the soup into bowls and garnish with extra herbs and lime wedges for a beautiful presentation.
