Instructions

  1. In a large skillet or pot, heat a drizzle of oil over medium heat. Add chopped garlic, ginger, and lemongrass. Sauté until fragrant, about 2-3 minutes.
  2. Pour in the broth and add the coconut milk, stirring well to combine. Bring to a gentle simmer.
  3. Toss in your vegetables and simmer for about 5-7 minutes until they start to soften.
  4. Gently place the fish fillets into the broth, cooking for 5-7 minutes, until cooked through and flaky.
  5. Squeeze fresh lime juice over the soup, stir in fresh herbs, and let everything combine for another minute on the heat.
  6. Taste and adjust seasoning as necessary.
  7. Ladle the soup into bowls and garnish with extra herbs and lime wedges for a beautiful presentation.
