Ingredients

  • 2 large eggs
  • 3 cups all-purpose flour
  • 1/4 cup espresso or strong brewed coffee
  • 2 teaspoons vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
  2. In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy, about 2–3 minutes.
  3. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  4. In another bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the butter mixture, mixing just until combined.
  6. Pour in the brewed coffee and mix until evenly distributed.
  7. Use a spoon or cookie scoop to drop dough balls onto the prepared baking sheets, spacing them a couple of inches apart.
  8. Bake in the preheated oven for 10–12 minutes until the edges are golden and the centers are set.
  9. Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
