  • 1/2 cup brown sugar
  • 1 large egg
  • 1/4 cup freshly brewed strong coffee
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line your baking sheets with parchment paper.
  2. In a large bowl, beat the unsalted butter with granulated and brown sugar until light and fluffy, about 2-3 minutes.
  3. Add the egg and mix well, then stir in the freshly brewed coffee and vanilla extract if using.
  4. In another bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry mixture to the wet mixture, stirring until just combined.
  6. Use a cookie scoop or tablespoon to portion out the dough onto prepared baking sheets, spacing them about 2 inches apart.
  7. Bake for about 10-12 minutes until the edges are golden but the centers remain soft.
  8. Let cool on the sheets for a few minutes, then transfer to a wire rack to cool completely.

Notes

For added flavor, consider using brown butter or adding nuts and chocolate chips. Chill the dough for better thickness.
