- 1/2 cup brown sugar
- 1 large egg
- 1/4 cup freshly brewed strong coffee
- 2 cups all-purpose flour
- 1/2 teaspoon baking soda

- 1 teaspoon vanilla extract (optional)
Instructions
- Preheat your oven to 350°F (175°C). Line your baking sheets with parchment paper.
- In a large bowl, beat the unsalted butter with granulated and brown sugar until light and fluffy, about 2-3 minutes.
- Add the egg and mix well, then stir in the freshly brewed coffee and vanilla extract if using.
- In another bowl, whisk together the flour, baking soda, and salt.
- Gradually add the dry mixture to the wet mixture, stirring until just combined.
- Use a cookie scoop or tablespoon to portion out the dough onto prepared baking sheets, spacing them about 2 inches apart.
- Bake for about 10-12 minutes until the edges are golden but the centers remain soft.
- Let cool on the sheets for a few minutes, then transfer to a wire rack to cool completely.
Notes
For added flavor, consider using brown butter or adding nuts and chocolate chips. Chill the dough for better thickness.
