Ingredients

  • 2 lbs pork (shoulder or butt), cubed
  • 6 strips bacon, diced
  • 3 medium apples (Granny Smith or Honeycrisp), chopped
  • 1 cup prunes, pitted and chopped
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 3 medium carrots, diced
  • 2 medium potatoes, diced
  • 2 teaspoons fresh thyme (or 1 teaspoon dried)
  • 1 teaspoon fresh rosemary (or ½ teaspoon dried)
  • Salt and pepper to taste

Instructions

  1. Dice the bacon and add it to a large, heavy-bottomed pot over medium heat. Cook for 5-7 minutes until crispy.
  2. Remove the bacon with a slotted spoon, leaving some rendered fat in the pot.
  3. Add chopped onions and sweat until translucent, about 5 minutes. Stir in minced garlic and cook for an additional minute.
  4. Add cubed pork, seasoning well with salt and pepper. Brown the pork on all sides for about 10 minutes.
  5. Stir in diced potatoes, carrots, apples, bacon, and prunes, then add the herbs.
  6. Pour in the broth, scraping up any bits stuck to the pot.
  7. Cover the pot, reduce the heat, and let it simmer for 1.5 to 2 hours until the pork is tender.
  8. Adjust seasoning as necessary before serving, adding a splash of apple cider vinegar if desired.

Notes

Letting the stew rest off heat before serving allows the flavors to meld beautifully.
