- 2 lbs pork (shoulder or butt), cubed
- 6 strips bacon, diced
- 3 medium apples (Granny Smith or Honeycrisp), chopped
- 1 cup prunes, pitted and chopped
- 1 large onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken or vegetable broth
- 3 medium carrots, diced
- 2 medium potatoes, diced
- 2 teaspoons fresh thyme (or 1 teaspoon dried)
- 1 teaspoon fresh rosemary (or ½ teaspoon dried)
- Salt and pepper to taste
Instructions
- Dice the bacon and add it to a large, heavy-bottomed pot over medium heat. Cook for 5-7 minutes until crispy.
- Remove the bacon with a slotted spoon, leaving some rendered fat in the pot.
- Add chopped onions and sweat until translucent, about 5 minutes. Stir in minced garlic and cook for an additional minute.
- Add cubed pork, seasoning well with salt and pepper. Brown the pork on all sides for about 10 minutes.
- Stir in diced potatoes, carrots, apples, bacon, and prunes, then add the herbs.
- Pour in the broth, scraping up any bits stuck to the pot.
- Cover the pot, reduce the heat, and let it simmer for 1.5 to 2 hours until the pork is tender.
- Adjust seasoning as necessary before serving, adding a splash of apple cider vinegar if desired.
Notes
Letting the stew rest off heat before serving allows the flavors to meld beautifully.
