A warm and hearty pork stew with smoky bacon, tart apples, and sweet prunes, perfect for chilly nights and family gatherings.

- 2 lbs pork shoulder, diced
- 4 strips bacon, chopped
- 2 tart apples, chopped (Granny Smith preferred)
- 1 cup prunes, pitted
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken or vegetable broth
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh herbs (thyme or rosemary)
Instructions
- Dice the pork shoulder into bite-sized cubes, and chop the onions and apples. Mince the garlic and set everything aside.
- In a large Dutch oven over medium heat, add olive oil and the bacon pieces. Cook until crispy. Remove bacon, leaving fat in the pot.
- Add the pork cubes to the same pot, season with salt and pepper, and sear until golden brown.
- Toss in the onions and garlic, sauté until translucent.
- Add the chopped apples and prunes, stirring for a couple of minutes.
- Pour in the broth and scrape any brown bits from the bottom.
- Toss in fresh herbs, bring to a gentle simmer.
- Reduce heat, cover, and let simmer for at least one hour.
- After simmering, taste and adjust seasoning as needed. Serve hot, garnished with reserved bacon.
Notes
For added flavor, let the stew sit overnight in the refrigerator before reheating. It also freezes well for up to three months.
