  • 8 oz cream cheese, softened
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/4 cup granulated sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, cream together the butter and brown sugar until soft and fluffy.
  3. Beat in the egg and vanilla extract until fully incorporated.
  4. Gradually mix in flour, baking soda, and salt to form dough.
  5. Gently fold in the cookie butter until well blended.
  6. In a separate bowl, beat together the softened cream cheese, granulated sugar, and a splash of vanilla until smooth.
  7. Using a spoon or cookie scoop, drop dollops of cookie dough onto the prepared baking sheet.
  8. Create a well in the center of each mound, fill with cheesecake mixture, and cover with more cookie dough.
  9. Bake for 12-15 minutes until edges are lightly golden.
  10. Cool on the baking sheet for a few minutes before transferring to a wire rack.
