- 1 cup cookie butter
- 2 1/4 cups all-purpose flour
- 3/4 cup brown sugar
- 8 oz cream cheese, softened
- 1 large egg
- 1 tsp vanilla extract
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/4 cup granulated sugar
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, cream together the butter and brown sugar until soft and fluffy.
- Beat in the egg and vanilla extract until fully incorporated.
- Gradually mix in flour, baking soda, and salt to form dough.
- Gently fold in the cookie butter until well blended.
- In a separate bowl, beat together the softened cream cheese, granulated sugar, and a splash of vanilla until smooth.
- Using a spoon or cookie scoop, drop dollops of cookie dough onto the prepared baking sheet.
- Create a well in the center of each mound, fill with cheesecake mixture, and cover with more cookie dough.
- Bake for 12-15 minutes until edges are lightly golden.
- Cool on the baking sheet for a few minutes before transferring to a wire rack.
Notes
For best results, chill the cookie dough for about an hour before baking to prevent spreading.
