Description

Delicious and chewy blueberry mochi cubes filled with cream cheese, perfect for family gatherings and snacks.


Ingredients

  • 1 cup glutinous rice flour
  • 1/2 cup water (or coconut milk)
  • 1 cup fresh blueberries
  • 4 oz cream cheese
  • 1/4 cup sugar
  • 1/4 cup cornstarch (for dusting)

Instructions

  1. In a large bowl, combine glutinous rice flour and sugar. Gradually stir in water until smooth.
  2. Pour the mixture into a greased steaming dish and steam for 20-25 minutes until translucent.
  3. While steaming, mix together the blueberries and cream cheese in a separate bowl, adding sugar for sweetness.
  4. Dust a countertop with cornstarch and transfer the hot mochi. Knead until pliable.
  5. Divide the dough, flatten each piece, place a spoonful of blueberry mixture, and seal into cubes.
  6. Chill in the refrigerator for 1 hour before serving.

Notes

If too sticky, dust with cornstarch. Can substitute blueberries with other fruits.
