Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the unsalted butter and powdered sugar until light and fluffy.
  3. Add in vanilla extract and mix until well combined.
  4. In a separate bowl, whisk together all-purpose flour and a pinch of salt, then gradually add to the butter mixture until just combined.
  5. Fold in mint chocolate chips and nuts if using.
  6. Scoop out small portions of dough (about 1 tablespoon each) and shape them into balls.
  7. Place the dough balls onto a parchment-lined baking sheet and bake for about 12-15 minutes, or until the edges are lightly golden.
  8. Allow cooling for a few minutes, then roll each cookie in powdered sugar.

Notes
