- 1 cup mint chocolate chips
- 1 teaspoon pure vanilla extract
- a pinch of salt
- Nuts (optional, chopped walnuts or pecans)
- Fresh mint (optional, freshly chopped)
Instructions
- Preheat your oven to 350°F (175°C).
- Cream together the unsalted butter and powdered sugar until light and fluffy.
- Add in vanilla extract and mix until well combined.
- In a separate bowl, whisk together all-purpose flour and a pinch of salt, then gradually add to the butter mixture until just combined.
- Fold in mint chocolate chips and nuts if using.
- Scoop out small portions of dough (about 1 tablespoon each) and shape them into balls.
- Place the dough balls onto a parchment-lined baking sheet and bake for about 12-15 minutes, or until the edges are lightly golden.
- Allow cooling for a few minutes, then roll each cookie in powdered sugar.
Notes
For extra mint flavor, add a few drops of peppermint extract to the dough.
