- 1 lb boneless chicken thighs or breasts, diced
- 3 tablespoons unsalted butter
- 6 cloves fresh garlic, minced
- 8 oz cremini or button mushrooms, sliced
- 1 tablespoon fresh thyme, chopped
- 1 tablespoon fresh parsley, chopped
- Juice of 1 lemon
- 1/2 cup chicken broth
- Salt and pepper to taste
Instructions
- Prepare the ingredients: Dice the chicken, clean and slice the mushrooms, and mince the garlic.
- Sear the chicken: In a large skillet, melt 2 tablespoons of butter over medium-high heat. Add the chicken pieces, season with salt and pepper, and cook until golden brown, about 5-7 minutes. Remove and set aside.
- Sauté the mushrooms: In the same skillet, add another tablespoon of butter. Toss in the mushrooms and sauté until tender, about 5 minutes. Add the minced garlic and sauté for an additional minute.
- Combine: Return the chicken to the skillet, pour in chicken broth, add lemon juice and herbs, stir well, and let simmer for 3-5 minutes.
- Finish and serve: Adjust seasoning and drizzle with extra melted butter and chopped parsley before serving.
