Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1 cup fresh mushrooms (button and cremini), chopped
  • 3 large eggs
  • 3 cloves garlic, minced
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1 cup whole milk
  • Fresh herbs (thyme or chives), chopped
  • 1 cup sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a Bundt pan with butter and dust it lightly with flour.
  2. In a skillet over medium heat, melt 2 tablespoons of butter, add minced garlic and mushrooms, and sauté until golden brown. Set aside to cool.
  3. In a large bowl, whisk together the flour, baking powder, and baking soda. Set aside.
  4. Cream the remaining butter with sugar until light and fluffy.
  5. Beat in the eggs one at a time, followed by the milk. Mix until combined.
  6. Gradually add the dry ingredients to the wet mixture until just combined, then fold in the sautéed mushrooms and herbs.
  7. Pour the batter into the prepared Bundt pan and bake for 40-50 minutes, or until a toothpick inserted comes out clean.
  8. Let cool for 10 minutes before inverting onto a wire rack to cool completely.
