- 2 cups all-purpose flour
- 1/2 cup unsalted butter, softened
- 1 cup fresh mushrooms (button and cremini), chopped
- 3 large eggs
- 3 cloves garlic, minced
- 1 tablespoon baking powder
- 1/2 teaspoon baking soda
- 1 cup whole milk
- Fresh herbs (thyme or chives), chopped
- 1 cup sugar
Instructions
- Preheat your oven to 350°F (175°C) and grease a Bundt pan with butter and dust it lightly with flour.
- In a skillet over medium heat, melt 2 tablespoons of butter, add minced garlic and mushrooms, and sauté until golden brown. Set aside to cool.
- In a large bowl, whisk together the flour, baking powder, and baking soda. Set aside.
- Cream the remaining butter with sugar until light and fluffy.
- Beat in the eggs one at a time, followed by the milk. Mix until combined.
- Gradually add the dry ingredients to the wet mixture until just combined, then fold in the sautéed mushrooms and herbs.
- Pour the batter into the prepared Bundt pan and bake for 40-50 minutes, or until a toothpick inserted comes out clean.
- Let cool for 10 minutes before inverting onto a wire rack to cool completely.
Notes
Serve warm with crème fraîche or a drizzle of spicy honey. Pairs well with coffee or iced tea.
