Ingredients

  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 1 cup whole milk
  • 3 large eggs
  • 1 cup fresh mushrooms, sliced (cremini or shiitake)
  • 2 cloves fresh garlic, minced
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup maple syrup (for drizzling)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease your Bundt pan.
  2. Sauté sliced mushrooms with minced garlic in a skillet over medium heat until golden.
  3. In a bowl, whisk together flour, sugar, baking powder, and salt.
  4. In another bowl, beat eggs and mix in melted butter and milk. Add cooled mushroom mixture.
  5. Gradually combine dry ingredients with wet mixture, stirring until just mixed.
  6. Pour batter into the prepared Bundt pan.
  7. Bake for 35–40 minutes or until a toothpick comes out clean.
  8. Allow to cool for 10 minutes, then invert onto a wire rack and drizzle with warm maple syrup.
