  • 2 cups egg noodles or rotini

  • 2 celery stalks, diced
  • 1 cup frozen peas
  • 1 teaspoon dried parsley
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onions and minced garlic, and sauté until fragrant and translucent.
  3. Toss in the chicken breasts and sear them for about 5 minutes until golden brown.
  4. Pour in the chicken broth and bring to a simmer; cook for about 15 minutes or until the chicken is cooked through.
  5. Remove the chicken and shred it using two forks, then return it to the pot.
  6. Stir in the cream cheese until fully melted, creating a rich broth.
  7. Add the noodles, carrots, and celery; cook until the noodles are tender.
  8. Finally, stir in the frozen peas and dried herbs; let simmer for an additional 5 minutes.
  9. Season with salt, pepper, and paprika to taste.
