- 2 chicken breasts (boneless)
- 4 cups chicken broth
- 8 oz cream cheese
- 2 cups egg noodles or rotini
- 2 carrots, diced
- 2 celery stalks, diced
- 1 cup frozen peas
- 1 teaspoon dried parsley
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add chopped onions and minced garlic, and sauté until fragrant and translucent.
- Toss in the chicken breasts and sear them for about 5 minutes until golden brown.
- Pour in the chicken broth and bring to a simmer; cook for about 15 minutes or until the chicken is cooked through.
- Remove the chicken and shred it using two forks, then return it to the pot.
- Stir in the cream cheese until fully melted, creating a rich broth.
- Add the noodles, carrots, and celery; cook until the noodles are tender.
- Finally, stir in the frozen peas and dried herbs; let simmer for an additional 5 minutes.
- Season with salt, pepper, and paprika to taste.
Notes
For a vegetarian option, replace chicken with mushrooms or tofu and use vegetable broth. Store leftovers in an airtight container in the refrigerator for up to 3 days.
