Ingredients

  • 1 cup rice (white, brown, or jasmine)
  • 8 oz mushrooms (button or cremini)
  • 1 can cream of chicken soup
  • 2 cups chicken or vegetable broth
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 tbsp fresh thyme (or dried)
  • 2 tbsp fresh parsley (or dried)
  • 2 tbsp butter
  • Salt and pepper to taste
  • Splash of lemon juice (optional)

Instructions

  1. Melt butter in a large pot over medium heat. Add diced onions and sauté until translucent.
  2. Introduce minced garlic and chopped mushrooms; sauté until mushrooms are tender.
  3. Add chicken and chicken broth, bringing to a gentle simmer.
  4. Stir in cream of chicken soup and cooked rice; mix until combined.
  5. Season with herbs, salt, and pepper to taste.
  6. Let simmer on low heat for about 20 minutes, stirring occasionally.
  7. Add a splash of lemon juice before serving and garnish with herbs.

Notes
