- 1 cup rice (white, brown, or jasmine)
- 8 oz mushrooms (button or cremini)
- 1 can cream of chicken soup
- 2 cups chicken or vegetable broth
- 1 medium onion, diced
- 3 cloves garlic, minced
- 2 tbsp fresh thyme (or dried)
- 2 tbsp fresh parsley (or dried)
- 2 tbsp butter
- Salt and pepper to taste
- Splash of lemon juice (optional)
Instructions
- Melt butter in a large pot over medium heat. Add diced onions and sauté until translucent.
- Introduce minced garlic and chopped mushrooms; sauté until mushrooms are tender.
- Add chicken and chicken broth, bringing to a gentle simmer.
- Stir in cream of chicken soup and cooked rice; mix until combined.
- Season with herbs, salt, and pepper to taste.
- Let simmer on low heat for about 20 minutes, stirring occasionally.
- Add a splash of lemon juice before serving and garnish with herbs.
Notes
This soup can be easily adapted with substitutions like tofu for chicken or quinoa for rice. Freeze leftovers for up to three months.
