Ingredients

- Sturdy bread (sourdough or baguette), cubed
- 1 cup fresh or frozen cranberries
- 2 Granny Smith apples, diced
- 1 onion, diced
- 2 stalks celery, diced
- 1/2 cup unsalted butter
- 2 cups chicken or vegetable broth
- 1 teaspoon fresh sage, chopped
- 1 teaspoon fresh thyme, chopped
- 1/4 cup fresh parsley, chopped
- 1/2 cup walnuts or pecans, chopped
- 2 eggs, beaten
Instructions
- Preheat the oven to 350°F (175°C).
- Chop the bread into cubes and toast lightly in the oven.
- In a large skillet, melt butter over medium heat. Add the diced onion and celery, cooking until soft, about 5 minutes.
- Stir in the diced apples and cook until tender, around 3-4 minutes.
- Add in the cranberries and nuts, mixing for another couple of minutes.
- In a large bowl, combine the toasted bread cubes and the sautéed mixture. Gradually pour in the broth.
- Stir in the beaten eggs and season with fresh herbs, salt, and pepper.
- Transfer the mixture to a greased baking dish, cover with foil, and bake for 30 minutes. Remove the foil and bake for an additional 15 minutes.
- Let cool slightly before serving, garnishing with fresh parsley.
Notes
For a fluffier stuffing, reduce the amount of broth. Using stale bread helps absorb flavors.
