A delightful blend of tart cranberries and sweet apples, perfect for holiday gatherings.


Ingredients

  • Sturdy bread (sourdough or baguette), cubed
  • 1 cup fresh or frozen cranberries
  • 2 Granny Smith apples, diced
  • 1 onion, diced
  • 2 stalks celery, diced
  • 1/2 cup unsalted butter
  • 2 cups chicken or vegetable broth
  • 1 teaspoon fresh sage, chopped
  • 1 teaspoon fresh thyme, chopped
  • 1/4 cup fresh parsley, chopped
  • 1/2 cup walnuts or pecans, chopped
  • 2 eggs, beaten

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Chop the bread into cubes and toast lightly in the oven.
  3. In a large skillet, melt butter over medium heat. Add the diced onion and celery, cooking until soft, about 5 minutes.
  4. Stir in the diced apples and cook until tender, around 3-4 minutes.
  5. Add in the cranberries and nuts, mixing for another couple of minutes.
  6. In a large bowl, combine the toasted bread cubes and the sautéed mixture. Gradually pour in the broth.
  7. Stir in the beaten eggs and season with fresh herbs, salt, and pepper.
  8. Transfer the mixture to a greased baking dish, cover with foil, and bake for 30 minutes. Remove the foil and bake for an additional 15 minutes.
  9. Let cool slightly before serving, garnishing with fresh parsley.

Notes

For a fluffier stuffing, reduce the amount of broth. Using stale bread helps absorb flavors.
