These charming cranberry and brie baked phyllo cups are the perfect blend of rich, creamy cheese and sweet tart cranberries, all nestled in a crispy, flaky shell.

- 1 package of phyllo dough
- 8 oz brie cheese, cut into small pieces
- 1 cup fresh cranberries (or dried)
- 1/4 cup melted butter
- Fresh thyme or rosemary, chopped
- Honey, for drizzling
Instructions
- Preheat your oven to 375°F (190°C).
- Unroll the phyllo dough and cover with a damp cloth to prevent it from drying out.
- Brush a muffin tin with melted butter and layer phyllo sheets, brushing each with butter as you go.
- Fill each phyllo shell with brie pieces and cranberries, drizzle with honey, and sprinkle herbs on top.
- Bake for 15–20 minutes until golden brown and crispy.
- Allow to cool for a few minutes before serving warm.
Notes
Be careful not to overfill the cups to avoid sogginess. Store leftovers in an airtight container for 2-3 days or freeze for later.
