  • 8 oz Brie cheese, cut into pieces
  • 1 cup cranberry sauce
  • 2 cups fresh spinach
  • 2 cloves garlic, minced

  • 1 tsp fresh thyme, chopped
  • 1 tsp fresh rosemary, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat. Sauté minced garlic until fragrant, then add spinach. Cook until wilted. Stir in cranberries, salt, pepper, and herbs, then remove from heat.
  3. Butterfly the chicken breasts by slicing them horizontally, creating a pocket without cutting all the way through.
  4. Generously fill each chicken breast with the spinach, cranberry, and Brie mixture. Secure with toothpicks if necessary.
  5. In the skillet, heat more olive oil and sear the stuffed chicken breasts on both sides until golden brown, about 2-3 minutes per side.
  6. Transfer seared chicken to a baking dish and bake for 20-25 minutes or until internal temperature reaches 165°F (74°C).
  7. Allow the chicken to rest for a few minutes before slicing to keep the flavors enclosed.
