- 4 boneless, skinless chicken breasts
- 8 oz Brie cheese, cut into pieces
- 1 cup cranberry sauce
- 2 cups fresh spinach
- 2 cloves garlic, minced
- 1 tbsp olive oil
- 1 tsp fresh thyme, chopped
- 1 tsp fresh rosemary, chopped
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat. Sauté minced garlic until fragrant, then add spinach. Cook until wilted. Stir in cranberries, salt, pepper, and herbs, then remove from heat.
- Butterfly the chicken breasts by slicing them horizontally, creating a pocket without cutting all the way through.
- Generously fill each chicken breast with the spinach, cranberry, and Brie mixture. Secure with toothpicks if necessary.
- In the skillet, heat more olive oil and sear the stuffed chicken breasts on both sides until golden brown, about 2-3 minutes per side.
- Transfer seared chicken to a baking dish and bake for 20-25 minutes or until internal temperature reaches 165°F (74°C).
- Allow the chicken to rest for a few minutes before slicing to keep the flavors enclosed.
