- 8 oz cream cheese, softened
- 2 cups fresh cranberries
- 1/2 cup sugar (adjust to taste)
- 2 cups whipped cream
- 1 tsp vanilla extract
- 1 cup graham crackers or vanilla wafers, crushed
Instructions
- In a medium saucepan, combine fresh cranberries and sugar over medium heat, cooking until the cranberries begin to burst, about 10 minutes. Remove from heat and let cool.
- In a large bowl, beat the softened cream cheese with an electric mixer until smooth. Gradually add in powdered sugar and vanilla extract, mixing until well incorporated.
- In another bowl, whip the chilled cream until soft peaks form. Gently fold it into the cream cheese mixture.
- In small cups, layer the crushed graham crackers, cream cheese mixture, and cooked cranberries, repeating layers until cups are full. Finish with a layer of whipped cream on top.
- Chill in the refrigerator for at least 120 minutes before serving, and optionally garnish with additional cranberries or mint.
Notes
Be careful not to overmix the cream cheese and whipped cream to maintain a light texture. Allowing the layers to cool is essential to keep the whipped cream from melting.
