A delightful balance of sweet and tart, these Cranberry Crumb Bars bring warmth and joy to any gathering.


Ingredients

  • 2 cups fresh or frozen cranberries
  • 1 cup unsalted butter, melted
  • 2 cups brown sugar
  • 1 egg
  • 2 cups rolled oats
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 pinch salt
  • Cinnamon or nutmeg (to taste)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Grease a 9×9-inch baking pan or line it with parchment paper.
  3. In a bowl, mix melted butter, brown sugar, and egg until smooth.
  4. In a separate bowl, combine oats, flour, baking powder, and salt.
  5. Gradually fold dry ingredients into the wet mixture to form a crumbly dough.
  6. Reserve one cup of the mixture for topping.
  7. Press the remaining mixture into the bottom of the baking dish to form the crust.
  8. Spread cranberries evenly over the crust, adding sugar over the berries if desired.
  9. Crumble the reserved mixture on top of the cranberries.
  10. Bake for about 30-35 minutes or until golden brown and the cranberries are bubbling.
  11. Cool in the pan for at least 15 minutes before transferring to a wire rack to cool completely.
  12. Slice into squares once cooled.

Notes

Keep an eye on the bars towards the end of baking; every oven is different. Let them cool completely before slicing.
