A delightful balance of sweet and tart, these Cranberry Crumb Bars bring warmth and joy to any gathering.
Ingredients

- 2 cups fresh or frozen cranberries
- 1 cup unsalted butter, melted
- 2 cups brown sugar
- 1 egg
- 2 cups rolled oats
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 pinch salt
- Cinnamon or nutmeg (to taste)
Instructions
- Preheat the oven to 350°F (175°C).
- Grease a 9×9-inch baking pan or line it with parchment paper.
- In a bowl, mix melted butter, brown sugar, and egg until smooth.
- In a separate bowl, combine oats, flour, baking powder, and salt.
- Gradually fold dry ingredients into the wet mixture to form a crumbly dough.
- Reserve one cup of the mixture for topping.
- Press the remaining mixture into the bottom of the baking dish to form the crust.
- Spread cranberries evenly over the crust, adding sugar over the berries if desired.
- Crumble the reserved mixture on top of the cranberries.
- Bake for about 30-35 minutes or until golden brown and the cranberries are bubbling.
- Cool in the pan for at least 15 minutes before transferring to a wire rack to cool completely.
- Slice into squares once cooled.
Notes
Keep an eye on the bars towards the end of baking; every oven is different. Let them cool completely before slicing.
