  • 1 cup granulated sugar
  • 1 cup all-purpose flour
  • 2 large eggs
  • ¼ cup granulated sugar (for crust)
  • Powdered sugar (for dusting)

Instructions

  1. Preheat your oven to 350°F (175°C). In a mixing bowl, blend 1 cup of flour, ½ cup of butter, and ¼ cup of sugar until crumbly. Press into a lined baking dish and bake for 15 minutes or until lightly golden.
  2. In another bowl, whisk together 2 eggs, 1 cup of sugar, zest of one lemon, and ½ cup of lemon juice until combined. Add 2 cups of cranberries to the mixture and stir gently.
  3. Pour the filling over the pre-baked crust and bake for an additional 25 minutes, or until the top is set and lightly golden.
  4. Allow the bars to cool in the pan. Once cool, dust with powdered sugar for that beautiful finish. Cut into squares and enjoy!
