Cranberry Maple Roast Chicken

Description

A comforting dish that combines the sweetness of maple syrup and tartness of cranberries, perfect for family gatherings and Thanksgiving.


Ingredients

  • 1 whole chicken (bone-in, skin-on)
  • 2 cups fresh cranberries
  • 1/2 cup pure maple syrup
  • 1/2 cup unsalted butter, softened
  • 4 cloves garlic, minced
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • Salt and pepper to taste
  • Optional: sliced citrus (lemons or oranges)
  • Optional: chili flakes or smoked paprika

Instructions

  1. Preheat your oven to 375°F (190°C). Rinse the chicken under cold water and pat it dry with paper towels.
  2. Rub the chicken all over with salt and pepper. Mix butter with garlic, herbs, and half the maple syrup. Loosen the skin on the chicken and smear this mixture underneath.
  3. Toss cranberries with remaining maple syrup and any additional seasonings in a bowl.
  4. Place the chicken breast side up in a roasting pan and scatter the cranberries around it.
  5. Roast for about 1 hour and 20 minutes, basting with drippings every 30 minutes. Tent with foil if the skin browns too quickly.
  6. Let the chicken rest for 15 minutes before carving. Serve with pan sauce drizzled over it.

Notes

For extra crispiness, increase oven temperature to 400°F (200°C) for the last 10-15 minutes of roasting.
