A comforting dish that combines the sweetness of maple syrup and tartness of cranberries, perfect for family gatherings and Thanksgiving.
Ingredients

- 1 whole chicken (bone-in, skin-on)
- 2 cups fresh cranberries
- 1/2 cup pure maple syrup
- 1/2 cup unsalted butter, softened
- 4 cloves garlic, minced
- 2 tablespoons fresh rosemary, chopped
- 2 tablespoons fresh thyme, chopped
- Salt and pepper to taste
- Optional: sliced citrus (lemons or oranges)
- Optional: chili flakes or smoked paprika
Instructions
- Preheat your oven to 375°F (190°C). Rinse the chicken under cold water and pat it dry with paper towels.
- Rub the chicken all over with salt and pepper. Mix butter with garlic, herbs, and half the maple syrup. Loosen the skin on the chicken and smear this mixture underneath.
- Toss cranberries with remaining maple syrup and any additional seasonings in a bowl.
- Place the chicken breast side up in a roasting pan and scatter the cranberries around it.
- Roast for about 1 hour and 20 minutes, basting with drippings every 30 minutes. Tent with foil if the skin browns too quickly.
- Let the chicken rest for 15 minutes before carving. Serve with pan sauce drizzled over it.
Notes
For extra crispiness, increase oven temperature to 400°F (200°C) for the last 10-15 minutes of roasting.
