- 1 whole chicken (4–5 pounds)
- 2 cups fresh cranberries
- 1/2 cup pure maple syrup
- 3 sprigs fresh rosemary
- 3 sprigs fresh thyme
- 4 cloves fresh garlic
- 2 shallots, sliced
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Season the cavity of the chicken generously with salt and pepper. Stuff it with rosemary, thyme, and whole garlic cloves.
- In a bowl, combine cranberries, maple syrup, olive oil, minced garlic, and sliced shallots. Toss to coat.
- Place the chicken in a roasting pan and pour the cranberry mixture over it, ensuring an even coat.
- Roast the chicken for 90 minutes, basting every 20-30 minutes until the internal temperature reaches 165°F (74°C).
- Let the chicken rest for at least 15 minutes before carving.
- Serve the chicken with pan juices drizzled on top, garnished with fresh thyme.
