  • 3 sprigs fresh thyme
  • 4 cloves fresh garlic
  • 2 shallots, sliced
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Season the cavity of the chicken generously with salt and pepper. Stuff it with rosemary, thyme, and whole garlic cloves.
  3. In a bowl, combine cranberries, maple syrup, olive oil, minced garlic, and sliced shallots. Toss to coat.
  4. Place the chicken in a roasting pan and pour the cranberry mixture over it, ensuring an even coat.
  5. Roast the chicken for 90 minutes, basting every 20-30 minutes until the internal temperature reaches 165°F (74°C).
  6. Let the chicken rest for at least 15 minutes before carving.
  7. Serve the chicken with pan juices drizzled on top, garnished with fresh thyme.
