Ingredients

  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • 1 pinch salt
  • 2 large eggs
  • ½ cup unsalted butter, melted
  • 1 cup milk or yogurt
  • 1 cup fresh or frozen cranberries
  • ½ cup chopped walnuts or pecans

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9×5-inch loaf pan or line it with parchment paper.
  3. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  4. In another bowl, beat the eggs, then mix in the melted butter and milk/yogurt until smooth.
  5. Gradually add the wet ingredients to dry ingredients, stirring gently until just combined.
  6. Fold in cranberries and nuts.
  7. Pour the batter into the prepared loaf pan and smooth the top.
  8. Bake for 55 to 60 minutes, or until a toothpick inserted in the center comes out clean.
  9. Let the loaf cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

For a gluten-free version, use almond flour. Consider adding chocolate chips or dried fruits for variation.
