- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 tablespoon baking powder
- 1 pinch salt
- 2 large eggs
- ½ cup unsalted butter, melted
- 1 cup milk or yogurt
- 1 cup fresh or frozen cranberries
- ½ cup chopped walnuts or pecans
Instructions
- Preheat your oven to 350°F (175°C).
- Grease a 9×5-inch loaf pan or line it with parchment paper.
- In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- In another bowl, beat the eggs, then mix in the melted butter and milk/yogurt until smooth.
- Gradually add the wet ingredients to dry ingredients, stirring gently until just combined.
- Fold in cranberries and nuts.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 55 to 60 minutes, or until a toothpick inserted in the center comes out clean.
- Let the loaf cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely before slicing.
Notes
For a gluten-free version, use almond flour. Consider adding chocolate chips or dried fruits for variation.
