Ingredients

- ½ cup ricotta cheese
- ½ cup milk
- 1 egg
- Zest and juice of 1 orange
- 1 cup fresh cranberries
Instructions
- In a large mixing bowl, combine flour, sugar, baking powder, and salt.
- In another bowl, whisk together ricotta cheese, milk, egg, orange zest, and orange juice until smooth.
- Pour wet mixture into dry ingredients and stir gently until just combined, then fold in cranberries.
- Preheat a non-stick skillet over medium heat and grease lightly.
- Pour about ¼ cup of batter for each pancake and cook until bubbles form, then flip and cook until golden brown.
- Serve warm with toppings of choice.
Notes
For a gluten-free option, substitute all-purpose flour with almond or oat flour. Top with yogurt or fresh fruit for added flavor.
