Ingredients

- 1 cup rolled oats
- 1/2 cup dried cranberries
- 1/2 cup chopped pistachios
- 1/2 cup nut butter (cashew or almond butter)
- 1/4 cup honey or maple syrup
- 1 teaspoon vanilla extract
- Pinch of salt
Instructions
- In a large mixing bowl, combine rolled oats, dried cranberries, and chopped pistachios.
- In a separate bowl, mix together nut butter, honey or maple syrup, and vanilla extract until smooth.
- Pour the wet mixture into the dry ingredients and gently fold until evenly coated.
- Scoop out portions of the mixture and roll into 1-inch balls.
- Place the energy bites on a lined baking sheet and refrigerate for at least 30 minutes.
- Once chilled, transfer to an airtight container for storage.
Notes
These energy bites can be stored in the fridge for up to a week or in the freezer for several months.
