A delightful treat made with rolled oats, dried cranberries, and pistachios, perfect for snacking or pre-workout fuel.


Ingredients

  • 1 cup rolled oats
  • 1/2 cup dried cranberries
  • 1/2 cup chopped pistachios
  • 1/2 cup nut butter (cashew or almond butter)
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. In a large mixing bowl, combine rolled oats, dried cranberries, and chopped pistachios.
  2. In a separate bowl, mix together nut butter, honey or maple syrup, and vanilla extract until smooth.
  3. Pour the wet mixture into the dry ingredients and gently fold until evenly coated.
  4. Scoop out portions of the mixture and roll into 1-inch balls.
  5. Place the energy bites on a lined baking sheet and refrigerate for at least 30 minutes.
  6. Once chilled, transfer to an airtight container for storage.

Notes

These energy bites can be stored in the fridge for up to a week or in the freezer for several months.
