- 1 Beef Roast (Chuck or Round)
- 1 cup Cranberry Sauce (homemade or store-bought)
- 1 Onion (yellow)
- 3 cloves Garlic (fresh, minced)
- 1 cup Beef Broth
- Fresh Herbs (Rosemary and Thyme)
- 2 tablespoons Butter
- Salt and Pepper (to taste)
Instructions
- Preheat your oven to 350°F (175°C).
- Season the beef roast generously with salt and pepper on all sides and pat it dry.
- In a large oven-proof skillet or Dutch oven, melt butter over medium-high heat.
- Add the roast and sear each side for 2-3 minutes until browned.
- Remove the roast and set it aside.
- In the same skillet, add chopped onion and minced garlic; sauté until translucent (about 3-5 minutes).
- Stir in the cranberry sauce and beef broth, then nestle the roast back into the pan.
- Add fresh herbs around the roast.
- Cover the skillet and transfer to the oven.
- Roast for 1 to 1.5 hours until desired doneness is reached (145°F for medium-rare, 160°F for medium).
- Allow the roast to rest for at least 15 minutes before slicing.
- Serve with pan juices drizzled over the top.
Notes
Using fresh herbs will elevate the dish; don’t skip the resting step after cooking for maximum juiciness.
