Description

A hearty and flavorful dish combining tender beef with the sweet and tart notes of cranberry.


Ingredients

  • 1 Beef Roast (Chuck or Round)
  • 1 cup Cranberry Sauce (homemade or store-bought)
  • 1 Onion (yellow)
  • 3 cloves Garlic (fresh, minced)
  • 1 cup Beef Broth
  • Fresh Herbs (Rosemary and Thyme)
  • 2 tablespoons Butter
  • Salt and Pepper (to taste)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Season the beef roast generously with salt and pepper on all sides and pat it dry.
  3. In a large oven-proof skillet or Dutch oven, melt butter over medium-high heat.
  4. Add the roast and sear each side for 2-3 minutes until browned.
  5. Remove the roast and set it aside.
  6. In the same skillet, add chopped onion and minced garlic; sauté until translucent (about 3-5 minutes).
  7. Stir in the cranberry sauce and beef broth, then nestle the roast back into the pan.
  8. Add fresh herbs around the roast.
  9. Cover the skillet and transfer to the oven.
  10. Roast for 1 to 1.5 hours until desired doneness is reached (145°F for medium-rare, 160°F for medium).
  11. Allow the roast to rest for at least 15 minutes before slicing.
  12. Serve with pan juices drizzled over the top.

Notes

Using fresh herbs will elevate the dish; don’t skip the resting step after cooking for maximum juiciness.
