Description

A hearty roast beef dish infused with sweet-tart cranberry sauce and aromatic herbs, perfect for family gatherings.


Ingredients

  • 1 Beef roast (chuck, round, or sirloin)
  • 2 cups Fresh cranberries
  • 1 Onion, diced
  • 3 cloves Garlic, minced
  • 2 sprigs Thyme, fresh
  • 2 sprigs Rosemary, fresh
  • 1/4 cup Brown sugar
  • 1 cup Beef broth or red wine
  • 2 tablespoons Olive oil

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Season the beef roast generously with salt and pepper.
  3. Heat a large skillet over medium-high heat and add olive oil. Sear the beef on all sides until browned (about 3-5 minutes per side).
  4. Remove the roast and set it aside. In the same skillet, add diced onion and sauté until translucent (about 5 minutes).
  5. Stir in minced garlic and fresh herbs, cooking for an additional minute until fragrant.
  6. Add cranberries, brown sugar, and broth or wine to the skillet. Stir to combine and bring to a simmer.
  7. Return the roast to the skillet, spooning some of the cranberry mixture over it. Cover with a lid or foil and place in the preheated oven.
  8. Roast for 2-2.5 hours, or until tender (135°F for medium-rare).
  9. Let the roast rest for 10-15 minutes before slicing.

Notes

Allow ingredients to reach room temperature before cooking for best results.
