Ingredients

- 1 Beef roast (chuck, round, or sirloin)
- 2 cups Fresh cranberries
- 1 Onion, diced
- 3 cloves Garlic, minced
- 2 sprigs Thyme, fresh
- 2 sprigs Rosemary, fresh
- 1/4 cup Brown sugar
- 1 cup Beef broth or red wine
- 2 tablespoons Olive oil
Instructions
- Preheat your oven to 325°F (160°C).
- Season the beef roast generously with salt and pepper.
- Heat a large skillet over medium-high heat and add olive oil. Sear the beef on all sides until browned (about 3-5 minutes per side).
- Remove the roast and set it aside. In the same skillet, add diced onion and sauté until translucent (about 5 minutes).
- Stir in minced garlic and fresh herbs, cooking for an additional minute until fragrant.
- Add cranberries, brown sugar, and broth or wine to the skillet. Stir to combine and bring to a simmer.
- Return the roast to the skillet, spooning some of the cranberry mixture over it. Cover with a lid or foil and place in the preheated oven.
- Roast for 2-2.5 hours, or until tender (135°F for medium-rare).
- Let the roast rest for 10-15 minutes before slicing.
Notes
Allow ingredients to reach room temperature before cooking for best results.
