- 8 oz Cream Cheese (full-fat recommended)
- 2 cloves Garlic, minced
- Fresh Herbs (like cilantro, parsley, or green onions)
- Salt and Pepper, to taste
- Olive oil, for cooking
Instructions
- Prepare the Dough: Combine flour, butter, and salt in a bowl. Add cold water gradually until a smooth dough forms. Wrap in plastic wrap and refrigerate for at least 30 minutes.
- Make the Filling: In a skillet, heat oil over medium heat. Sauté minced garlic until fragrant, then stir in cream cheese and herbs. Mix and season with salt and pepper.
- Roll Out the Dough: On a floured surface, roll out chilled dough to about 1/8 inch thick and cut out circles.
- Fill and Seal: Place a spoonful of filling on each circle, fold to create a half-moon shape, and crimp edges with a fork.
- Cook the Empanadas: Brush with olive oil and bake at 375°F for about 20 minutes until golden brown, or fry until crispy and golden.
- Enjoy: Allow to cool slightly and serve warm with dipping sauces.
Notes
You can make these empanadas healthier by using whole wheat flour for the dough and adding vegetables to the filling.
