Ingredients

  • 2 boneless chicken breasts or thighs
  • 1 pound fresh asparagus, chopped
  • 1 cup button or cremini mushrooms, sliced
  • 1 cup heavy cream
  • 3 cloves garlic, minced
  • 1 cup cheddar cheese, shredded
  • 1 cup mozzarella cheese, shredded
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh thyme or parsley for garnish
  • Pinch of nutmeg (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Season the boneless chicken with salt and pepper. In a skillet, add olive oil and sauté the chicken until golden brown and cooked through, about 7-10 minutes. Remove and let rest.
  3. In the same skillet, add oil if needed, and sauté chopped mushrooms and asparagus until tender, about 5-7 minutes.
  4. In a bowl, combine heavy cream, minced garlic, and a generous handful of cheese for a smooth mixture.
  5. In a large casserole dish, layer the cooked chicken, mushrooms, and asparagus. Pour the creamy mixture over the top.
  6. Sprinkle remaining cheese and herbs over the top.
  7. Bake for about 25-30 minutes until bubbling and golden brown.
  8. Let it sit for a few minutes before serving.

Notes

For a lighter version, substitute heavy cream with half-and-half. Adjust seasoning to taste while cooking.
