- 2 boneless chicken breasts or thighs
- 1 pound fresh asparagus, chopped
- 1 cup button or cremini mushrooms, sliced
- 1 cup heavy cream
- 3 cloves garlic, minced
- 1 cup cheddar cheese, shredded
- 1 cup mozzarella cheese, shredded
- 1 tablespoon olive oil
- Salt and pepper to taste
- Fresh thyme or parsley for garnish
- Pinch of nutmeg (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- Season the boneless chicken with salt and pepper. In a skillet, add olive oil and sauté the chicken until golden brown and cooked through, about 7-10 minutes. Remove and let rest.
- In the same skillet, add oil if needed, and sauté chopped mushrooms and asparagus until tender, about 5-7 minutes.
- In a bowl, combine heavy cream, minced garlic, and a generous handful of cheese for a smooth mixture.
- In a large casserole dish, layer the cooked chicken, mushrooms, and asparagus. Pour the creamy mixture over the top.
- Sprinkle remaining cheese and herbs over the top.
- Bake for about 25-30 minutes until bubbling and golden brown.
- Let it sit for a few minutes before serving.
Notes
For a lighter version, substitute heavy cream with half-and-half. Adjust seasoning to taste while cooking.
