Ingredients

  • 1 pound boneless, skinless chicken breast or thighs
  • 8 ounces fettuccine or penne pasta
  • 4 tablespoons butter
  • 1 cup heavy cream
  • 3 cloves garlic, minced
  • 1 medium onion, finely chopped
  • 8 ounces button or cremini mushrooms, sliced
  • Fresh herbs (parsley and thyme), chopped
  • 1/2 cup freshly grated Parmesan cheese
  • Salt and pepper, to taste

Instructions

  1. Bring a large pot of salted water to a boil and cook pasta according to package instructions until al dente. Drain and set aside, reserving a cup of pasta water.
  2. Melt butter in a large skillet over medium heat. Add garlic and onion, sautéing until translucent and fragrant, about 2-3 minutes.
  3. Season the chicken with salt and pepper, and add to the skillet. Cook until browned and fully cooked, about 7-10 minutes. Remove chicken from the skillet.
  4. In the same skillet, add sliced mushrooms. Cook until browned and tender, around 5 minutes.
  5. Lower the heat and pour in heavy cream, stirring to combine with sautéed bits. Let simmer for about 3-4 minutes, adding reserved pasta water if the sauce thickens too much.
  6. Return chicken to skillet, add cooked pasta, and toss everything until well-coated in the creamy sauce. Stir in fresh herbs and Parmesan cheese.
  7. Serve immediately, garnishing with extra herbs and a side of crusty bread.

Notes

For a lighter version, substitute half and half for heavy cream and add more vegetables. Ensure to season well throughout the cooking process.
