- 1 pound boneless, skinless chicken breast or thighs
- 8 ounces fettuccine or penne pasta
- 4 tablespoons butter
- 1 cup heavy cream
- 3 cloves garlic, minced
- 1 medium onion, finely chopped
- 8 ounces button or cremini mushrooms, sliced
- Fresh herbs (parsley and thyme), chopped
- 1/2 cup freshly grated Parmesan cheese
- Salt and pepper, to taste
Instructions
- Bring a large pot of salted water to a boil and cook pasta according to package instructions until al dente. Drain and set aside, reserving a cup of pasta water.
- Melt butter in a large skillet over medium heat. Add garlic and onion, sautéing until translucent and fragrant, about 2-3 minutes.
- Season the chicken with salt and pepper, and add to the skillet. Cook until browned and fully cooked, about 7-10 minutes. Remove chicken from the skillet.
- In the same skillet, add sliced mushrooms. Cook until browned and tender, around 5 minutes.
- Lower the heat and pour in heavy cream, stirring to combine with sautéed bits. Let simmer for about 3-4 minutes, adding reserved pasta water if the sauce thickens too much.
- Return chicken to skillet, add cooked pasta, and toss everything until well-coated in the creamy sauce. Stir in fresh herbs and Parmesan cheese.
- Serve immediately, garnishing with extra herbs and a side of crusty bread.
Notes
For a lighter version, substitute half and half for heavy cream and add more vegetables. Ensure to season well throughout the cooking process.
