Ingredients

- 1 lb large raw shrimp, peeled and deveined
- 8 oz fettuccine or linguine
- 1 cup heavy cream
- 2 tbsp butter
- 2 tbsp Cajun seasoning
- 4 cloves garlic, minced
- 1 cup bell peppers, diced
- 1/2 cup onion, diced
- Fresh parsley, chopped
- Lemon juice, to taste
Instructions
- Cook the pasta according to package instructions until al dente. Drain and reserve 1 cup of pasta water.
- In a large skillet over medium heat, melt the butter. Add the diced onion and bell peppers, sauté for 3-4 minutes until softened.
- Add minced garlic and cook for another minute.
- Add the shrimp and sprinkle with Cajun seasoning. Cook until the shrimp are pink and opaque, about 3-5 minutes.
- Reduce heat and stir in the cream. Simmer until thickened, adding reserved pasta water as needed.
- Fold in the cooked pasta and add lemon juice. Season with salt and pepper to taste.
- Garnish with chopped parsley before serving.
Notes
For a vegetarian version, you can substitute shrimp with sautéed mushrooms or seasoned tofu.
