- 1 lb Boneless chicken (breast or thighs)
- 6 slices Thick-cut bacon
- 4 cups Chicken broth
- 1 cup Heavy cream or half-and-half
- 1 Onion, diced
- 3 cloves Garlic, minced
- 2 Celery stalks, diced
- 2 Carrots, sliced
- 2 medium Potatoes, diced
- 1 cup Peas
- 2 Bay leaves
- Fresh thyme (to taste)
- Fresh parsley (to taste)
- Salt (to taste)
- Freshly cracked black pepper (to taste)
Instructions
- In a large soup pot, cook the bacon over medium heat until crispy, then remove and set aside, leaving drippings in the pot.
- Add diced onion, celery, and carrots to the pot; sauté until softened, about 5 minutes.
- Stir in minced garlic and cook for another minute until fragrant.
- Add the chicken to the pot and let it sear slightly.
- Pour in the chicken broth and bay leaves, and bring mixture to a gentle simmer.
- After about 15 minutes, remove the chicken, shred it, and return it to the pot.
- Add the potatoes and simmer for another 10-15 minutes until fork-tender.
- Remove bay leaves, reduce heat, and stir in heavy cream.
- Season with salt, pepper, and fresh herbs before serving, topped with crumbled crispy bacon.
- Serve warm with crusty bread on the side.
Notes
For a lighter option, substitute turkey for chicken or use coconut milk for a dairy-free version. The soup can also be frozen for up to three months.
