Ingredients

  • 1 lb Boneless chicken (breast or thighs)
  • 6 slices Thick-cut bacon
  • 4 cups Chicken broth
  • 1 cup Heavy cream or half-and-half
  • 1 Onion, diced
  • 3 cloves Garlic, minced
  • 2 Celery stalks, diced
  • 2 Carrots, sliced
  • 2 medium Potatoes, diced
  • 1 cup Peas
  • 2 Bay leaves
  • Fresh thyme (to taste)
  • Fresh parsley (to taste)
  • Salt (to taste)
  • Freshly cracked black pepper (to taste)

Instructions

  1. In a large soup pot, cook the bacon over medium heat until crispy, then remove and set aside, leaving drippings in the pot.
  2. Add diced onion, celery, and carrots to the pot; sauté until softened, about 5 minutes.
  3. Stir in minced garlic and cook for another minute until fragrant.
  4. Add the chicken to the pot and let it sear slightly.
  5. Pour in the chicken broth and bay leaves, and bring mixture to a gentle simmer.
  6. After about 15 minutes, remove the chicken, shred it, and return it to the pot.
  7. Add the potatoes and simmer for another 10-15 minutes until fork-tender.
  8. Remove bay leaves, reduce heat, and stir in heavy cream.
  9. Season with salt, pepper, and fresh herbs before serving, topped with crumbled crispy bacon.
  10. Serve warm with crusty bread on the side.

Notes

For a lighter option, substitute turkey for chicken or use coconut milk for a dairy-free version. The soup can also be frozen for up to three months.
