A comforting and creamy lasagna filled with tender chicken, sautéed mushrooms, and rich cheeses, perfect for family gatherings.


Ingredients

  • 2 cups rotisserie chicken, shredded
  • 912 lasagna noodles (no-boil or traditional)
  • 1 cup ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1 cup spinach (fresh or frozen)
  • 1 cup mushrooms, sliced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1 teaspoon oregano
  • 1 teaspoon basil
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook the chicken if starting from raw, season with salt, pepper, and herbs. Sauté until fully cooked, then shred and set aside.
  3. Sauté onions and garlic in olive oil until translucent, then add mushrooms and spinach; cook until tender.
  4. Mix ricotta, cream, half the mozzarella, salt, pepper, and herbs in a bowl.
  5. In a baking dish, layer creamy sauce, noodles, chicken and vegetables, and cheese mixture. Repeat, finishing with noodles and remaining sauce and mozzarella.
  6. Cover with foil and bake for 30 minutes, then remove foil and bake for an additional 15-20 minutes until bubbly.
  7. Let sit for 10-15 minutes before serving.

Notes

For a vegetarian version, use shredded vegetables instead of chicken and a dairy-free cream substitute if necessary.
