A comforting and creamy lasagna filled with tender chicken, sautéed mushrooms, and rich cheeses, perfect for family gatherings.

- 2 cups rotisserie chicken, shredded
- 9–12 lasagna noodles (no-boil or traditional)
- 1 cup ricotta cheese
- 2 cups shredded mozzarella cheese
- 1 cup spinach (fresh or frozen)
- 1 cup mushrooms, sliced
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1 teaspoon oregano
- 1 teaspoon basil
- 1 teaspoon thyme
- Salt and pepper to taste
- 1/2 cup grated Parmesan cheese
Instructions
- Preheat your oven to 375°F (190°C).
- Cook the chicken if starting from raw, season with salt, pepper, and herbs. Sauté until fully cooked, then shred and set aside.
- Sauté onions and garlic in olive oil until translucent, then add mushrooms and spinach; cook until tender.
- Mix ricotta, cream, half the mozzarella, salt, pepper, and herbs in a bowl.
- In a baking dish, layer creamy sauce, noodles, chicken and vegetables, and cheese mixture. Repeat, finishing with noodles and remaining sauce and mozzarella.
- Cover with foil and bake for 30 minutes, then remove foil and bake for an additional 15-20 minutes until bubbly.
- Let sit for 10-15 minutes before serving.
Notes
For a vegetarian version, use shredded vegetables instead of chicken and a dairy-free cream substitute if necessary.
