- 1 lb chicken sausage
- 1 cup heavy cream
- 8 oz cremini mushrooms, sliced
- 1 medium onion, diced
- 4 cloves garlic, minced
- 2 carrots, diced
- 2 medium potatoes, diced
- 2 celery stalks, diced
- 4 cups chicken broth
- 2 sprigs fresh thyme
- 1 bay leaf
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh parsley, chopped for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Add sliced chicken sausage and brown for 4-5 minutes.
- Add diced onions, minced garlic, and sliced mushrooms; sauté for another 4-5 minutes.
- Toss in diced carrots and potatoes, cooking for an additional 3-4 minutes.
- Pour in chicken broth and heavy cream, bring to a gentle simmer.
- Add fresh herbs and bay leaf, and simmer for 20-25 minutes until potatoes are fork-tender.
- Taste and adjust seasoning with salt and pepper.
- Serve hot and garnish with chopped parsley.
Notes
For a vegetarian version, substitute chicken sausage with tofu and use vegetable broth.
