- 1 lb boneless chicken (breast or thighs)
- 1 can (13.5 oz) coconut milk
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 inch fresh ginger, minced
- 4 cups chicken or vegetable broth
- 2 carrots, sliced
- 1 bell pepper, chopped
- 8 oz mushrooms, sliced
- 1/2 cup fresh cilantro, chopped
- 1 lime, juiced
- 1–2 fresh chili peppers, minced (optional)
- Salt and pepper to taste
Instructions
- Chop the chicken into bite-sized pieces, mince the garlic and ginger, and slice the vegetables.
- Heat a large pot over medium heat and add a touch of olive oil. Sauté garlic and onion until fragrant and translucent.
- Add the chicken pieces and stir until they begin to brown on all sides.
- Incorporate the ginger and any vegetables you are using; allow them to soften for a few minutes.
- Pour in the coconut milk and broth, stirring to combine.
- Bring the mixture to a gentle boil, then reduce heat to a simmer. Let it cook for about 20 minutes until the chicken is cooked through.
- Finish by adding lime juice and fresh cilantro. Season with salt, pepper, and chili to taste.
- Let the soup sit for a few minutes before serving to meld together the flavors.
- Serve warm, garnished with additional cilantro and lime wedges.
Notes
For a quicker meal, use rotisserie chicken and shred it into the soup during the last few minutes of cooking.
