Instructions

  1. Melt butter over medium heat in a large pot. Add diced onions and minced garlic, stirring frequently until translucent (about 5 minutes).
  2. Add diced potatoes, stirring for 3-4 minutes to absorb the butter.
  3. Pour in the vegetable or chicken broth, bring to a gentle boil, then simmer until potatoes are tender (around 15 minutes).
  4. Stir in fresh corn and heavy cream, then let simmer for another 10 minutes.
