- 2 medium Yukon Gold potatoes, diced
- 2 cups heavy cream
- 4 cups vegetable or chicken broth
- 2 tablespoons fresh thyme, chopped
- Salt and pepper to taste
- Butter for sautéing
Instructions
- Melt butter over medium heat in a large pot. Add diced onions and minced garlic, stirring frequently until translucent (about 5 minutes).
- Add diced potatoes, stirring for 3-4 minutes to absorb the butter.
- Pour in the vegetable or chicken broth, bring to a gentle boil, then simmer until potatoes are tender (around 15 minutes).
- Stir in fresh corn and heavy cream, then let simmer for another 10 minutes.
- Season generously with salt and pepper, and a splash of lemon juice if desired.
- Ladle chowder into bowls, garnishing with fresh herbs or crumbled bacon as desired.
Notes
