Ingredients

  • 1 lb jumbo lump crab meat
  • 1 lb fresh shrimp, peeled and deveined
  • 1 cup heavy cream
  • 4 tbsp unsalted butter
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 2 stalks celery, diced
  • 1 cup carrots, finely diced
  • 2 cups seafood or chicken broth
  • 1/2 cup dry sherry or white wine
  • Salt and pepper to taste
  • 1 tsp dried thyme
  • 2 bay leaves
  • Fresh parsley or dill for garnish

Instructions

  1. In a large pot, melt butter over medium heat. Add diced onions, minced garlic, and diced celery. Cook until softened, about 5 minutes.
  2. Toss in finely diced carrots, season with salt and pepper, and cook until the vegetables are tender.
  3. Gently add the shrimp and crab meat, cooking just until the shrimp turns pink.
  4. Pour in the broth and sherry (or white wine), and bring everything to a simmer. Scoop off any foam that rises to the top.
  5. Reduce the heat to low, pour in the heavy cream, and stir to combine without boiling.
  6. Taste the bisque and adjust seasoning with salt, pepper, and a touch of lemon juice.
  7. Serve hot, garnished with fresh herbs and a sprinkle of Old Bay seasoning or hot sauce if desired.

Notes

Use a heavy-bottomed pot to prevent scorching. Do not rush the cooking of seafood to avoid rubbery texture.
