- 1 lb jumbo lump crab meat
- 1 lb fresh shrimp, peeled and deveined
- 1 cup heavy cream
- 4 tbsp unsalted butter
- 1 large onion, diced
- 3 cloves garlic, minced
- 2 stalks celery, diced
- 1 cup carrots, finely diced
- 2 cups seafood or chicken broth
- 1/2 cup dry sherry or white wine
- Salt and pepper to taste
- 1 tsp dried thyme
- 2 bay leaves
- Fresh parsley or dill for garnish
Instructions
- In a large pot, melt butter over medium heat. Add diced onions, minced garlic, and diced celery. Cook until softened, about 5 minutes.
- Toss in finely diced carrots, season with salt and pepper, and cook until the vegetables are tender.
- Gently add the shrimp and crab meat, cooking just until the shrimp turns pink.
- Pour in the broth and sherry (or white wine), and bring everything to a simmer. Scoop off any foam that rises to the top.
- Reduce the heat to low, pour in the heavy cream, and stir to combine without boiling.
- Taste the bisque and adjust seasoning with salt, pepper, and a touch of lemon juice.
- Serve hot, garnished with fresh herbs and a sprinkle of Old Bay seasoning or hot sauce if desired.
Notes
Use a heavy-bottomed pot to prevent scorching. Do not rush the cooking of seafood to avoid rubbery texture.
