- 4 cups potatoes (Yukon gold or russet), diced
- 1 cup chicken or vegetable broth
- 8 oz cream cheese, cubed
- 1 cup cheddar cheese, grated
- 4 cloves garlic, minced
- 1 onion, diced
- 4 slices bacon, optional
- Fresh chives or parsley, for garnish
Instructions
- Prep the ingredients by dicing the potatoes, onions, and garlic.
- Layer the diced potatoes at the bottom of the crock pot. Add onions and garlic, seasoning lightly with salt and pepper.
- Pour in the broth, ensuring the potatoes and veggies are submerged.
- Scatter cream cheese on top and, if using, sprinkle chopped bacon across the top.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- After cooking, taste and adjust seasoning with herbs or spices.
- For creaminess, blend a portion of the soup with an immersion blender and stir in grated cheddar until melted.
- Ladle into bowls and garnish with chives or crispy bacon bits if desired.
Notes
For a vegetarian version, skip the bacon and use vegetable broth. Non-dairy cream cheese can be used for a dairy-free option.
