Ingredients

  • 1 lb large raw shrimp, tail-on
  • 1 cup orzo pasta
  • 1 cup heavy cream
  • 4 cloves fresh garlic, minced
  • 2 tbsp lemon juice
  • 1 tbsp lemon zest
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp fresh parsley or basil, chopped
  • 2 tbsp butter
  • 1 tbsp olive oil

Instructions

  1. Heating a mixture of butter and olive oil in a large skillet over medium heat, add minced garlic and sauté until fragrant.
  2. Add the shrimp to the skillet in a single layer. Cook for 2-3 minutes on each side until they turn pink and opaque. Remove the shrimp from the skillet and set aside.
  3. In the same skillet, add a bit more oil or butter and pour in the uncooked orzo. Toss for about a minute before adding water or broth, following the package instructions. Stir until the orzo is al dente.
  4. Reduce heat to low, stir in the heavy cream, lemon juice, lemon zest, and Parmesan cheese until creamy.
  5. Return the cooked shrimp to the skillet along with fresh herbs. Stir gently and adjust seasoning as needed.
  6. Serve the creamy orzo into bowls, garnishing with extra herbs and lemon zest.
