Ingredients

  • 8 oz spaghetti or fettuccine
  • 1 lb fresh shrimp, peeled and deveined
  • 1 lb scallops
  • 1 cup heavy cream
  • 4 cloves garlic, minced
  • 2 tbsp butter
  • 1 tbsp olive oil (optional)
  • 1/2 cup freshly grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley or basil, chopped

Instructions

  1. Boil a large pot of salted water and cook pasta until al dente. Reserve 1 cup of pasta water and drain.
  2. Melt butter (and olive oil if using) in a skillet over medium heat. Add minced garlic and sauté until fragrant.
  3. Add shrimp and scallops to the skillet, cooking for 3-4 minutes until opaque.
  4. Whisk in heavy cream and simmer for a few minutes. Add Parmesan, salt, and pepper, stirring until thickened.
  5. Toss the drained pasta with the sauce; add reserved pasta water to reach desired consistency.
  6. Fold in chopped herbs before serving. Garnish with additional Parmesan and fresh parsley.

Notes

For lighter options, substitute half-and-half for cream. Use whole wheat or gluten-free pasta as needed. Fresh garlic is preferred for the best flavor.
