Ingredients

  • 4 boneless chicken breasts or thighs
  • 1 cup heavy cream
  • 4 cloves fresh garlic, minced
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 cup mushrooms, sliced (cremini or button)
  • 2 cups fresh spinach, chopped
  • 1/2 cup freshly grated Parmesan cheese
  • 1 tbsp olive oil
  • Salt and pepper, to taste
  • Italian herbs (basil, oregano), to taste
  • Pinch of red pepper flakes (optional)

Instructions

  1. Prep your ingredients: clean and slice mushrooms, mince garlic, and chop spinach and sun-dried tomatoes.
  2. Cook the chicken: in a large skillet over medium-high heat, add olive oil. Season chicken with salt and pepper, sear until golden brown (5-7 minutes per side), remove and set aside.
  3. Sauté the garlic and mushrooms: in the same skillet, add more oil if needed, toss in garlic and sauté until fragrant. Add mushrooms and cook until tender (4-5 minutes).
  4. Prepare the creamy sauce: add sun-dried tomatoes and heavy cream, stirring to combine. Bring to a gentle simmer, season with Italian herbs and optional red pepper flakes.
  5. Combine: return chicken to the skillet, add spinach, and let it wilt for a couple of minutes.
  6. Finish with Parmesan: sprinkle grated Parmesan cheese on top and stir to combine.
  7. Serve warm: plate the dish and garnish with extra herbs if desired, serve hot with rice, pasta, or bread.

Notes

For lighter options, substitute heavy cream with half-and-half or coconut cream; for non-dairy, try nutritional yeast instead of Parmesan.
