- 4 boneless chicken breasts or thighs
- 1 cup heavy cream
- 4 cloves fresh garlic, minced
- 1/2 cup sun-dried tomatoes, chopped
- 1 cup mushrooms, sliced (cremini or button)
- 2 cups fresh spinach, chopped
- 1/2 cup freshly grated Parmesan cheese
- 1 tbsp olive oil
- Salt and pepper, to taste
- Italian herbs (basil, oregano), to taste
- Pinch of red pepper flakes (optional)
Instructions
- Prep your ingredients: clean and slice mushrooms, mince garlic, and chop spinach and sun-dried tomatoes.
- Cook the chicken: in a large skillet over medium-high heat, add olive oil. Season chicken with salt and pepper, sear until golden brown (5-7 minutes per side), remove and set aside.
- Sauté the garlic and mushrooms: in the same skillet, add more oil if needed, toss in garlic and sauté until fragrant. Add mushrooms and cook until tender (4-5 minutes).
- Prepare the creamy sauce: add sun-dried tomatoes and heavy cream, stirring to combine. Bring to a gentle simmer, season with Italian herbs and optional red pepper flakes.
- Combine: return chicken to the skillet, add spinach, and let it wilt for a couple of minutes.
- Finish with Parmesan: sprinkle grated Parmesan cheese on top and stir to combine.
- Serve warm: plate the dish and garnish with extra herbs if desired, serve hot with rice, pasta, or bread.
Notes
For lighter options, substitute heavy cream with half-and-half or coconut cream; for non-dairy, try nutritional yeast instead of Parmesan.
