Ingredients

  • 1 lb boneless chicken thighs or breasts
  • 8 oz fresh cremini or button mushrooms, sliced
  • 4 cloves fresh garlic, minced
  • 1 cup heavy cream
  • 1 cup low-sodium chicken broth
  • 2 tbsp fresh basil, chopped
  • 1 tsp fresh thyme, chopped
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp olive oil
  • 2 tbsp butter
  • Salt to taste
  • Pepper to taste

Instructions

  1. Season the chicken liberally with salt and pepper.
  2. In a large skillet, heat olive oil and butter over medium-high heat. Add the chicken and cook until golden brown, about 7-8 minutes per side. Remove chicken and set aside.
  3. In the same skillet, add sliced mushrooms and cook until softened, about 5 minutes.
  4. Add minced garlic and stir for about 30 seconds until fragrant.
  5. Pour in the chicken broth and bring to a simmer. Stir in the heavy cream and allow to thicken.
  6. Return the chicken to the skillet to reheat in the sauce for a few minutes. Stir in fresh herbs and adjust seasoning if necessary.
  7. Serve over pasta, rice, or mashed potatoes, garnished with extra Parmesan and herbs.

Notes

For a lighter option, substitute heavy cream with half-and-half or coconut milk. Consider using tofu or chickpeas for a vegetarian version.
