- 1 lb boneless chicken thighs or breasts
- 8 oz fresh cremini or button mushrooms, sliced
- 4 cloves fresh garlic, minced
- 1 cup heavy cream
- 1 cup low-sodium chicken broth
- 2 tbsp fresh basil, chopped
- 1 tsp fresh thyme, chopped
- 1/2 cup grated Parmesan cheese
- 2 tbsp olive oil
- 2 tbsp butter
- Salt to taste
- Pepper to taste
Instructions
- Season the chicken liberally with salt and pepper.
- In a large skillet, heat olive oil and butter over medium-high heat. Add the chicken and cook until golden brown, about 7-8 minutes per side. Remove chicken and set aside.
- In the same skillet, add sliced mushrooms and cook until softened, about 5 minutes.
- Add minced garlic and stir for about 30 seconds until fragrant.
- Pour in the chicken broth and bring to a simmer. Stir in the heavy cream and allow to thicken.
- Return the chicken to the skillet to reheat in the sauce for a few minutes. Stir in fresh herbs and adjust seasoning if necessary.
- Serve over pasta, rice, or mashed potatoes, garnished with extra Parmesan and herbs.
Notes
For a lighter option, substitute heavy cream with half-and-half or coconut milk. Consider using tofu or chickpeas for a vegetarian version.
