Ingredients

  • 1 cup plain Greek yogurt
  • 4 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 cup sliced mushrooms (white button or cremini)
  • Fresh parsley or basil, chopped
  • Salt and pepper, to taste

Instructions

  1. Bring a large pot of salted water to a boil. Cook pasta according to package instructions until al dente, then reserve a cup of pasta water before draining.
  2. In a skillet, heat olive oil over medium heat. Add minced garlic and sauté gently until just golden, about 2-3 minutes.
  3. Add sliced mushrooms, season with salt and pepper, and sauté until tender, about 5-7 minutes.
  4. Reduce heat to low and stir in Greek yogurt, mixing well. Add a splash of reserved pasta water to reach desired consistency.
  5. Add the drained pasta and toss to coat in the creamy sauce.
  6. Toss in freshly chopped herbs for flavor and color.
  7. Plate the dish, garnishing with additional herbs, a drizzle of olive oil, or Parmesan cheese as desired.

Notes
