- 8 oz pasta (spaghetti or fettuccine)
- 1 cup plain Greek yogurt
- 4 cloves garlic, minced
- 2 tbsp olive oil
- 1 cup sliced mushrooms (white button or cremini)
- Fresh parsley or basil, chopped
- Salt and pepper, to taste
Instructions
- Bring a large pot of salted water to a boil. Cook pasta according to package instructions until al dente, then reserve a cup of pasta water before draining.
- In a skillet, heat olive oil over medium heat. Add minced garlic and sauté gently until just golden, about 2-3 minutes.
- Add sliced mushrooms, season with salt and pepper, and sauté until tender, about 5-7 minutes.
- Reduce heat to low and stir in Greek yogurt, mixing well. Add a splash of reserved pasta water to reach desired consistency.
- Add the drained pasta and toss to coat in the creamy sauce.
- Toss in freshly chopped herbs for flavor and color.
- Plate the dish, garnishing with additional herbs, a drizzle of olive oil, or Parmesan cheese as desired.
Notes
Adjust the amount of garlic based on your preference. Incorporate additional veggies like spinach for added nutrition.
