A creamy and comforting Cajun potato soup made in a slow cooker, perfect for chilly evenings.

- 4 large Potatoes (Russet or Yukon Gold), peeled and diced
- 1 large Onion, diced
- 3 cloves Garlic, minced
- 2 tablespoons Cajun seasoning
- 4 cups Vegetable or chicken broth
- 1 cup Heavy cream or sour cream
- 1 cup Corn (optional)
- Green onions or parsley for garnish
Instructions
- Prep your ingredients by peeling and dicing the potatoes and onions, and mincing the garlic.
- In the slow cooker, layer the potatoes, then sprinkle the diced onions and minced garlic on top. Add the Cajun seasoning and pour the broth over everything.
- Cook on low for approximately 6-8 hours or until the potatoes are easily mashed with a fork.
- Once cooked, use an immersion blender to achieve your desired creamy texture, or mash some of the potatoes for a heartier consistency.
- Stir in the heavy cream or sour cream until combined, adjusting salt and pepper to taste.
- Ladle the soup into bowls and garnish with freshly chopped green onions or parsley.
- Serve with crusty bread or a salad for a complete meal.
Notes
For a lighter version, consider using Greek yogurt instead of heavy cream. Leftovers can be stored in an airtight container in the refrigerator for 3-4 days or frozen for up to 3 months.
