Ingredients

  • 4 large Potatoes (Russet or Yukon Gold), peeled and diced
  • 1 large Onion, diced
  • 3 cloves Garlic, minced
  • 2 tablespoons Cajun seasoning
  • 4 cups Vegetable or chicken broth
  • 1 cup Heavy cream or sour cream
  • 1 cup Corn (optional)
  • Green onions or parsley for garnish

Instructions

  1. Prep your ingredients by peeling and dicing the potatoes and onions, and mincing the garlic.
  2. In the slow cooker, layer the potatoes, then sprinkle the diced onions and minced garlic on top. Add the Cajun seasoning and pour the broth over everything.
  3. Cook on low for approximately 6-8 hours or until the potatoes are easily mashed with a fork.
  4. Once cooked, use an immersion blender to achieve your desired creamy texture, or mash some of the potatoes for a heartier consistency.
  5. Stir in the heavy cream or sour cream until combined, adjusting salt and pepper to taste.
  6. Ladle the soup into bowls and garnish with freshly chopped green onions or parsley.
  7. Serve with crusty bread or a salad for a complete meal.

Notes

For a lighter version, consider using Greek yogurt instead of heavy cream. Leftovers can be stored in an airtight container in the refrigerator for 3-4 days or frozen for up to 3 months.
