  • 1 cup heavy cream (for topping)
  • 1 tablespoon sugar (for topping)
  • Chocolate shavings (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C). In a bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until crumbly and press firmly into a pie dish. Bake for 8-10 minutes until golden, then let cool completely.
  2. In a saucepan over medium heat, whisk together the heavy cream, milk, and cocoa powder until warm, not boiling. In a separate bowl, whisk together the egg yolks and granulated sugar. Gradually add the warm cream mixture into the egg mixture, whisking constantly. Return to the saucepan and cook until it thickens slightly.
  3. Pour the chocolate filling into the cooled crust and let it chill in the refrigerator for at least 4 hours, or overnight for best results.
  4. Once chilled, whip up the heavy cream with sugar until soft peaks form. Spread generously over the pie and sprinkle with chocolate shavings.
  5. Cut into slices and serve, optionally with peppermint sticks or fresh berries.

Notes

Ensure the crust is completely cooled before adding the filling to avoid a soggy bottom. Chill the pie adequately to allow flavors to meld.
