Ingredients

  • 8 oz fettuccine or linguine
  • 8 oz fresh or smoked salmon
  • 1 cup heavy cream
  • 1/4 cup fresh dill, chopped
  • 2 cloves garlic, minced
  • 1/4 cup lemon juice and zest
  • 1/2 cup Parmesan cheese, grated
  • 2 tbsp olive oil or butter
  • Salt and pepper to taste

Instructions

  1. Cook the pasta in salted water until al dente, reserving 1 cup of the pasta water before draining.
  2. In a skillet, heat olive oil or butter over medium heat, sauté garlic until fragrant.
  3. Add heavy cream, bring to a simmer, and stir in lemon juice, zest, and dill.
  4. If the sauce is thick, add reserved pasta water to adjust consistency.
  5. Flake in cooked salmon, or sear fresh salmon seasoned with salt and pepper, then add to the sauce.
  6. Toss drained pasta in the sauce until well coated, adjusting seasoning as necessary.
  7. Serve hot, garnished with Parmesan and extra dill.

Notes

For a lighter version, substitute heavy cream with half-and-half. For a dairy-free option, use coconut milk.
