Ingredients

- 8 oz fettuccine or linguine
- 8 oz fresh or smoked salmon
- 1 cup heavy cream
- 1/4 cup fresh dill, chopped
- 2 cloves garlic, minced
- 1/4 cup lemon juice and zest
- 1/2 cup Parmesan cheese, grated
- 2 tbsp olive oil or butter
- Salt and pepper to taste
Instructions
- Cook the pasta in salted water until al dente, reserving 1 cup of the pasta water before draining.
- In a skillet, heat olive oil or butter over medium heat, sauté garlic until fragrant.
- Add heavy cream, bring to a simmer, and stir in lemon juice, zest, and dill.
- If the sauce is thick, add reserved pasta water to adjust consistency.
- Flake in cooked salmon, or sear fresh salmon seasoned with salt and pepper, then add to the sauce.
- Toss drained pasta in the sauce until well coated, adjusting seasoning as necessary.
- Serve hot, garnished with Parmesan and extra dill.
Notes
For a lighter version, substitute heavy cream with half-and-half. For a dairy-free option, use coconut milk.
