  • Gruyere cheese, grated
  • Heavy cream
  • Garlic, minced

  • Butter
  • Fresh thyme
  • Salt and pepper, to taste

Instructions

  1. Cook the pasta in salted water according to package directions until al dente. Reserve a cup of pasta water and drain.
  2. In a large skillet, heat olive oil and butter over medium heat. Add chopped onions and cook until translucent, about 5 minutes. Stir in minced garlic and sauté for another minute until fragrant.
  3. Add the mushrooms and sauté until golden brown and tender, about 8-10 minutes. Season with salt, pepper, and fresh thyme.
  4. Lower the heat and slowly pour in the heavy cream, letting it come to a gentle simmer. Add grated Gruyere and stir until melted, creating a creamy sauce. If too thick, add reserved pasta water to adjust consistency.
  5. Toss drained pasta in the skillet with the mushroom sauce, mixing thoroughly. Taste and adjust seasoning. Serve immediately with a sprinkle of fresh thyme or additional cheese.

Notes

For extra flavor, consider toasting breadcrumbs with garlic and butter to add a crunchy topping before serving.
