Ingredients
- Pasta (fettuccine, penne, or whole wheat)
- Cremini and shiitake mushrooms (or button mushrooms)
- Gruyere cheese, grated
- Heavy cream
- Garlic, minced
- Onion, finely chopped
- Olive oil
- Butter
- Fresh thyme
- Salt and pepper, to taste
Instructions
- Cook the pasta in salted water according to package directions until al dente. Reserve a cup of pasta water and drain.
- In a large skillet, heat olive oil and butter over medium heat. Add chopped onions and cook until translucent, about 5 minutes. Stir in minced garlic and sauté for another minute until fragrant.
- Add the mushrooms and sauté until golden brown and tender, about 8-10 minutes. Season with salt, pepper, and fresh thyme.
- Lower the heat and slowly pour in the heavy cream, letting it come to a gentle simmer. Add grated Gruyere and stir until melted, creating a creamy sauce. If too thick, add reserved pasta water to adjust consistency.
- Toss drained pasta in the skillet with the mushroom sauce, mixing thoroughly. Taste and adjust seasoning. Serve immediately with a sprinkle of fresh thyme or additional cheese.
Notes
For extra flavor, consider toasting breadcrumbs with garlic and butter to add a crunchy topping before serving.
