- 2 cups fresh mushrooms (cremini, shiitake, or button)
- 3 cloves garlic, minced
- 1 medium onion, chopped
- 4 cups vegetable or chicken broth
- 1 cup heavy cream
- 1 cup freshly grated Parmesan cheese
- Fresh herbs (thyme or parsley), chopped
- Salt and pepper to taste

Instructions
- In a large skillet, heat a splash of olive oil over medium heat. Add chopped onions and minced garlic, and sauté until onions are translucent.
- Toss in sliced mushrooms, stirring occasionally until golden brown.
- Add the orzo to the skillet and stir for about two minutes.
- Pour in the broth, bringing the mixture to a gentle boil, then reduce heat and let it simmer for about 10-12 minutes.
- Once the orzo is al dente, reduce heat further and stir in heavy cream and grated Parmesan until creamy.
- Fold in freshly chopped herbs, and season with salt and pepper to taste.
- Serve warm, garnished with extra cheese or herbs if desired.
