Ingredients

  • 2 cloves garlic, minced
  • 2 cups fresh spinach
  • 2 cups diced fresh tomatoes (or 1 can crushed tomatoes)
  • 1 cup heavy cream (or half-and-half)
  • 1/2 cup grated Parmesan cheese
  • 1 tbsp olive oil or butter
  • Salt to taste
  • Fresh basil or dried Italian seasoning

Instructions

  1. In a large pot, heat olive oil or butter over medium heat and sauté minced garlic until fragrant, about 1 minute.
  2. Add diced tomatoes and a pinch of salt, cooking down for 5–7 minutes.
  3. Stir in pasta and enough water to cover by an inch, bringing to a boil.
  4. Reduce to medium-low, cover, and let simmer for 10–12 minutes, stirring occasionally.
  5. Once pasta is al dente, fold in fresh spinach until wilted.
  6. Pour in heavy cream, stirring gently, and let cook for 2–3 minutes to thicken.
  7. Remove from heat, mix in grated Parmesan cheese, and adjust seasoning if needed.
  8. Serve immediately, garnished with fresh basil or extra cheese.

Notes

Use whole wheat or chickpea pasta for a healthier option; feel free to add crushed red pepper for spice.
