- 8 oz short pasta (penne or fusilli)
- 2 cloves garlic, minced
- 2 cups fresh spinach
- 2 cups diced fresh tomatoes (or 1 can crushed tomatoes)
- 1 cup heavy cream (or half-and-half)
- 1/2 cup grated Parmesan cheese
- 1 tbsp olive oil or butter
- Salt to taste
- Fresh basil or dried Italian seasoning
Instructions
- In a large pot, heat olive oil or butter over medium heat and sauté minced garlic until fragrant, about 1 minute.
- Add diced tomatoes and a pinch of salt, cooking down for 5–7 minutes.
- Stir in pasta and enough water to cover by an inch, bringing to a boil.
- Reduce to medium-low, cover, and let simmer for 10–12 minutes, stirring occasionally.
- Once pasta is al dente, fold in fresh spinach until wilted.
- Pour in heavy cream, stirring gently, and let cook for 2–3 minutes to thicken.
- Remove from heat, mix in grated Parmesan cheese, and adjust seasoning if needed.
- Serve immediately, garnished with fresh basil or extra cheese.
Notes
Use whole wheat or chickpea pasta for a healthier option; feel free to add crushed red pepper for spice.
