- 1 cup orzo
- 1 pound shrimp, peeled and deveined
- 2 cups broccoli florets
- 4 cloves garlic, minced
- 1 onion, finely chopped
- 1 cup heavy cream
- 3 tablespoons butter
- 2 tablespoons olive oil
- 1/2 cup Parmesan cheese, grated
- Fresh parsley or basil for garnish
Instructions
- Boil a pot of salted water and cook the orzo according to package directions until al dente. Drain and set aside.
- In a large skillet over medium heat, melt butter and olive oil, then add chopped onion and sauté until translucent.
- Stir in minced garlic and cook until fragrant.
- Add shrimp to the skillet and sauté until pink and opaque, about 3-4 minutes.
- Incorporate broccoli florets and cook until vibrant green, about 3-4 minutes.
- Pour in heavy cream and simmer gently, thickening slightly. Add reserved pasta water if necessary.
- Fold in the cooked orzo and season with salt, pepper, and fresh herbs.
- Add grated Parmesan cheese, stir until melted, and adjust seasoning if needed.
- Serve warm, garnished with extra cheese and herbs.
Notes
For a vegetarian option, substitute shrimp with grilled chicken or sautéed tofu. Use whole grain orzo for a healthier twist.
