- 2 cups mushrooms (button, cremini, or shiitake), sliced
- 2 cloves garlic, minced
- 1 small onion, diced
- 2 tablespoons butter
- 1 tablespoon olive oil
- 3 cups vegetable broth
- 1/2 cup heavy cream
- 1/4 cup fresh herbs (parsley or thyme), chopped

- Pour in vegetable broth and bring to a gentle boil. Stir in the orzo and a pinch of salt. Reduce heat and simmer until orzo is al dente, about 8-10 minutes.
- Stir in heavy cream and let simmer for an additional 2-3 minutes to thicken the sauce.
- Add grated Parmesan cheese and fresh herbs, adjusting seasoning with salt and pepper to taste.
- Serve warm, topped with extra Parmesan and herbs if desired.
Notes
Ensure to sauté mushrooms properly to enhance flavor. Taste as you go for seasoning adjustments.
